Lemongrass Pork Burgers

Happy Friday! What a week it’s been. Watching the devastation caused by the flooding from Hurricane Harvey in Texas has been awful. It’s crazy to think that not even a year ago our own beautiful island was turned upside down by Hurricane Matthew. It was awful and the flooding in Houston looks so much worse.  I didn’t think Hilton Head would ever look the same, but almost a year later, it almost does. It’s amazing how people came together and so many wonderful incidences of compassion and aspects of humanity emerged from such a terrible storm. I know the same thing will happen in Houston, but the process will be long and heartbreaking for so many who lost so much.

As hard as the Harvey coverage has been to watch, Robert and I had something to celebrate this week as well. We are officially half way through this pregnancy, a milestone that seemed unimaginable at the beginning of it all. Hitting the half way mark this week also meant we got to experience our anatomy scan, which was indescribably amazing. Modern medicine is nothing short of miraculous, and watching an anatomy ultrasound is the perfect example of this. We saw tiny fingers and toes, the ventricles of the brain, two tiny kidneys (which honestly just looked like little black spots to me), a long spine and ribs, and best of all the 4 chambers of a rapidly beating little heart ❤

I was apprehensive going into this ultrasound since we opted not to do any genetic testing prior to this appointment. A few days before the test I wondered if that was the right decision and if we would get shocking news once the ultrasound began. Thankfully, all appears to be well, and the doctor reassured us that anything life threatening would have been picked up. I’m sure I’ll find brand new worries in a few days but for now I am feeling thankful and relieved.

We also got confirmation that we are having a little girl. Or as the doctor referred to the picture, “yep, three lines, that’s a hamburger!”. Awkward.

Lemon Dill Chicken Orzo Soup

I am going through a soup season in life right now. I have always been partial to soup but lately I have really been craving warmth. Fuzzy slippers, flannel pants, seat heaters, you name it. I’ve never been big on hot tubs (aesthetically or hygienically) but I’ve recently found myself day dreaming about them on more than one occasion. This can maybe be attributed to the fact that after replacing our hot water heater upon moving in, our shower, much to my dismay, just doesn’t get very hot 😦 Is there anything worse than a ‘warm’ shower? The answer to this is of course yes, there are about a million worse things and this is a total first world problem…I know…. but when I’m standing under that less-than-hot spray, the burn your feet off jacuzzi day dreams come on STRONG.

Veggies

So, if I can’t have a hot shower, at least I can have hot soup, right? Or perhaps I can use the hot soup to bribe my husband into calling the plumber again. You reading this babe? I think I’m on to something.

This soup is loosely based on a recipe my mom clipped out of the newspaper and became obsessed with a few years back. Hers was delicious, but I think mine is heartier. If you aren’t into orzo you could use rice (or pearl cous cous) and it would still be equally as yummy. The feta is also optional but adds a little something something I would hate to see go.

Simple Summer Lunch: Sweet Pepper Tuna Poppers

Happy Thursday! I am so excited for the weekend, who’s with me? I LOVE the 4th of July! I mean come on, who doesn’t love to celebrate our beautiful country and sweet freedom by dressing up in flag themed apparel, eating red white and blue themed everything and spending time with friends and family at your closest beach/lake/pool/backyard? AND you get a day off from work? Hallelujah, America you sure are beautiful.

4th 2014 4th Cookie

Robert and I have spent the last few “Fourths” with my family either at my grandparent’s beach house in North Carolina or my aunt and uncle’s in Florida. Both are two of my very favorite places, but it was high time we spent an Independence Day here in Hilton Head.  My sister had to work since she took off for our Chicago trip a few weeks ago, but my parents agreed to come here for the weekend and are getting in tonight, I can’t wait! Next year my goal will definitely be to have all of us together somewhere sandy!

 4th in FL

I can’t wait to spend time with my parents, and I am almost equally as excited about the gift my mother is bringing… my very own herb pots!  I love to cook with fresh herbs but have never had a lot of luck growing my own on our little back patio. Unfortunately I didn’t inherit a green thumb (or even a green pinkie) from my mother or grandfather who are both avid gardeners. My sweet mama must have finally gotten sick of listening to me complain about the price of fresh herbs because a few months ago she started two big pots full of a variety of herbs for me. Best Gift Ever! I can’t wait to smell them, use them and hopefully not kill them. Fingers crossed! It gets hot down here on the South Carolina coast and I am not always the best at remembering to water….

 Finished Poppers

Second to extra Renly cuddles and waking up an hour later, my favorite thing about having the summer off is no lunchbox. During the school year, to save money and remain mindful, I pack my own lunch for work every day and it gets really, really monotonous. I eat a lot of kale salads and a lot of apple slices and string cheese. And by a lot I mean I eat that every day, literally. I’ve gotten very good at cooking just enough dinner to feed two people so the rare occasion I get to bring leftovers for lunch is a special treat. Sometimes by Friday I’m out of salad and end up eating oatmeal at my desk. My lunch game during the school year is pretty sad so lets not dwell on that. Instead we’ll focus on the beauty of actually cooking lunch during the summer time…hooray!
